Massimiliano Alajmo

Nato a Padova nel 1974, Massimiliano (Max) Alajmo, insieme al fratello Raffaele (Raf) e alla sorella Laura, rappresenta la terza generazione di una famiglia che ha nel dna la passione per l’ospitalità, il cibo, e la cucina.

Dopo aver frequentato l’istituto alberghiero “Pietro d’Abano” di Abano Terme (PD), Massimiliano inizia le sue esperienze presso le cucine di importanti chef italiani ed europei: Ja Navalge di Alfredo Chiocchetti a Moena, l’Auberge de l’Eridan di Marc Veyrat a Veyrier-du-Lac e Les Près d’Eugenie di Michel Guérard a Eugénie -les- Bains.

Nel 1989 Raf inizia ad affiancare il padre Erminio in sala a Le Calandre a Sarmeola di Rubano (PD). Nel 1993, Max inizia a lavorare nella cucina insieme alla mamma Rita Chimetto, che nel 1992 riceve la prima stella Michelin. Nel 1994 Max assume la guida della cucina, mentre Raf diventa il manager. Nel 1997 il ristorante riceve la seconda stella Michelin, per arrivare ad essere insignito della terza nel 2002, rendendo Max il più giovane chef al mondo ad aver ricevuto, a soli 28 anni, questo riconoscimento. I principi della cucina: leggerezza, profondità dei sapori, fluidità, rispetto degli ingredienti.

Massimiliano (Max) Alajmo was born in 1974, in Padova. He, together with his brother Raffaele (Raf) and his sister Laura, represents the third generation of a family that has the passion of hospitality, food and cuisine in its DNA.

After attending the hotel school “Pietro d’Abano” in Abano Terme (PD), Massimiliano started his working experiences in the kitchens of important Italian and European chefs: Ja Navalge of Alfredo Chiocchetti in Moena, the Auberge de l’Eridan of Marc Veyrat in Veyrier-du-Lac and Les Près d’Eugenie of Michel Guérard in Eugénie- les-Bains.

In 1989, Raf started to work alongside his father Erminio at Le Calandre in Sarmeola di Rubano (PD). In 1993, Max swas working with his mother Rita Chimetto, who has received the restaurant’s first Michelin star in 1992. In 1994, Max took over the kitchen, while Raf becomes the restaurant manager. In 1997, the restaurant received the second Michelin star and its third in 2002, making Max the youngest chef in the world to receive this recognition at just 28 years old. The principles of his way of cooking are lightness, depth of tastes, fluidity, respect of the ingredients.
