Daniele Zennaro

Daniele Zennaro nasce in provincia di Rovigo nel 1979 e cresce con stimoli gastronomici dati dalla nonna e dalle zie. Studia all’istituto alberghiero e migliora la propria manualità nelle cucine d’albergo con grandi brigate durate le stagioni. Dal 2003 è stabile a Venezia: prima al ristorante De Pisis dell’Hotel Bauer Il Palazzo, quindi al Bauer Palladio; per 6 anni è stato lo chef del Vecio Fritolin. Le sue esperienze proseguono poi al Ristorante Canova del Baglioni Hotel Luna e sviluppa un nuovo approccio “pop” con la cucina presso il Marciano Excelsior.

Da fine agosto 2021 è chef de cuisine del ristorante Algiubagiò, alle Fondamenta Nuove, affacciato sulla laguna di Venezia con un’ampia terrazza sull’acqua; un locale gourmet e di design, dove viene posta la massima cura ai particolari e alla ricerca della materia prima. Sono tre gli elementi essenziali sui quali si basano le sue creazioni: la qualità dei prodotti, la stagionalità e la cura nel lavorarli. Negli ultimi anni ha approfondito la ricerca gastronomica cercando stimoli nuovi attraverso le erbe spontanee della Laguna.

Lo chef è sempre aperto a nuove intuizioni e sperimentazioni, che partono dal passato riponendole oggi in linea con il gusto moderno. Un suo grande pregio è l’intelligente capacità di lavorare in team.

Daniele Zennaro was born in the province of Rovigo in 1979 and grew up with gastronomic samples given by his grandmother and aunts. He studied at the hotel institute and improved his dexterity in hotel kitchens with large brigades throughout the seasons. He has been in Venice since 2003: first at the De Pisis restaurant of the Hotel Bauer Il Palazzo, then at the Bauer Palladio; for 6 years he was the chef of Vecio Fritolin. His experiences then continued at the Canova Restaurant of the Baglioni Hotel Luna and he developed a new “pop” approach to cooking at the Marciano Excelsior.

From the end of August 2021 he has been chef de cuisine at the Algiubagiò restaurant, at the Fondamenta Nuove, on the Venice lagoon with a large terrace overlooking the water; a gourmet and design venue, where the utmost attention is paid to details and the search for raw materials. There are three essential elements on which his creations are based: the quality of the products, the seasonality and the care in working them. In recent years he has deepened his gastronomic research looking for new stimuli through the spontaneous herbs of the Lagoon.

The chef is always open to new intuitions and experiments, which start from the past and place them today in line with modern taste. A great merit of him is the intelligent ability to work in a team.
