Manuele Fanutza nasce nel 1974 a Nuxis, nel sud-ovest della Sardegna. Inizia a studiare Giurisprudenza ma si accorge che il suo futuro e la sua grande passione sono dietro i fornelli, seguendo le orme di famiglia, dalla zia Letizia alla mamma Gioconda, che hanno dato vita al ristorante Letizia, punto di ristoro per generazioni di buongustai sardi e non solo. Oggi al timone di Letizia c’è Manuele, conosciuto e stimato per la sua cucina tipica sarda rivisitata, che unisce tradizione e innovazione.
Spesso impegnato in eventi internazionali, ha portato lustro alla sua adorata Sardegna. Unico cuoco sardo invitato a partecipare agli eventi per le celebrazioni dell’Unità d’Italia ad Alba nel 2009, è stato infatti uno degli chef più apprezzati di Expo a Milano, in Brasile per la settimana italiana della cultura o in Belgio per presentazioni di prodotti e cucina tipica e avvio e ristrutturazione di ristoranti italiani.
Di recente Manuele ha avviato l’accademia di cucina e arti “Letizia Food & Lab”, con lo scopo di valorizzare le risorse umane, enogastronomiche e i saperi della Sardegna.

Manuele Fanutza was born in 1974 in Nuxis, in the south-west of Sardinia. He began to study Law but realized that his future and his great passion were at the stoves, following in the footsteps of the family, from aunt Letizia to his mother Gioconda, who gave birth to the Letizia restaurant, an eating place for generations of Sardinian gourmets and not only. Today at the helm of Letizia restaurant is Manuele, known and respected for his revisited typical Sardinian cuisine, which combines tradition and innovation.
Often engaged in international events, he brought prestige to his beloved Sardinia. The only Sardinian chef invited to participate in the events for the celebrations of the Unification of Italy in Alba in 2009, he was in fact one of the most appreciated chefs at Expo in Milan, in Brazil for the Italian culture week or in Belgium for product presentations and typical cuisine and start and renovation of Italian restaurants.
Manuele recently started the “Letizia Food & Lab” academy of cooking and arts, with the aim of enhancing the manpower, food and wine and knowledge of Sardinia.
