Riccardo Farnese

Riccardo Farnese nasce a Varese 32 anni fa, cresce in cucina con le nonne e scava nella tradizione italiana. Fa l’alberghiero al Collegio De Filippi ad Arona (NO) e lavora al ristorante Da Vittorio a Brusaporto (BG) e a Villa Crespi sul Lago d’Orta. Finita la scuola è all’Etoile Academy a Tuscania (VT), dove segue i corsi di pasticceria e panificazione. Va in Alto Adige al Rosa Alpina e a La Siriola, poi all’Hotel Bellevue di Cogne (AO) e al ristorante Claudio a Bergeggi (SV). È chef per 5 anni nel Relais&Châteaux la Meridiana a Garlenda (SV), dove impara la gestione di un locale.

Infine va a Lingueglietta, in provincia di Imperia, immersa negli ulivi e affacciata al mare, dove tre anni fa apre Da U Titti con la moglie, una cuoca dai modi pacati e una cucina audace, rispettosa della stagionalità di terra e di mare, attenta alla freschezza del prodotto. Con loro ci sono 5 giovani collaboratori fra sala e cucina e una sommelier che gestisce la carta di circa 180 etichette. Aperti tutte le sere, sabato e domenica anche a pranzo, hanno al massimo 30-35 coperti. Il locale è interamente ristrutturato, dotato di una magnifica vista mare e di un parcheggio adiacente.

Riccardo Farnese was born in Varese 32 years ago. He grew up with his grandmothers, diving deeply inside Italian cooking tradition. He attended the hotel school Collegio De Filippi in Arona, Novara and worked at Da Vittorio restaurant in Brusaporto, Bergamo and in Villa Crespi on Lake Orta. After school he attended the Etoile Academy in Tuscania, Viterbo, where he participated in patisserie and baking courses. He then moved to Alto Adige to work at Rosa Alpina and at La Siriola, then at Hotel Bellevue in Cogne, Aosta, and at Claudio restaurant in Bergeggi, Savona. He spent five years as a chef at Relais&Châteaux la Meridiana in Garlenda, Savona, where he learnt how to run a restaurant.

He later moved to Lingueglietta, Imperia, among olive trees and on the sea, and there three years ago he opened Da U Titti, with his wife, a cook with a quite demeanour but audacious cuisine, always respectful of the sea and land seasons and the freshness of the raw material. The are also five young co-workers between the restaurant and the kitchen, while a lady sommelier is in charge of a ca. 180 labels wine list. Da U Titti is open every evening, but also for lunch on Saturday and Sunday and it sits up to 30/35 people. The venue has been totally renovated and can boast a magnificent view of the sea and a car park.
