Roberto Petza

Roberto Petza nasce nel 1968 a San Gavino Monreale, piccolo centro della pianura del Campidano. Dopo il diploma all’Istituto Alberghiero di Alghero decide di affinare le proprie tecniche nei migliori ristoranti. Nel 1998 rientra in Sardegna e inaugura nel suo paese natale il ristorante S’Apposentu, raccogliendo riconoscimenti che ne attestano l’assoluto valore. Nel 2002 si trasferisce a Cagliari e fonda S’Apposentu al Teatro Lirico mantenendo la cucina tipica del territorio e le materie prime selezionate. I gourmet e le grandi guide gastronomiche nazionali e internazionali lo premiano. Nel 2010 una nuova sfida. Inventa l’Accademia dell’alta cucina sarda nel paese della pasta: Siddi. Qui trasferisce anche il suo ristorante in una villa liberty dei primi del ‘900, proprio nella casa di famiglia dei proprietari dello storico Pastificio Puddu. Nascono così il ristorante S’Apposentu di Casa Puddu e l’Accademia Casa Puddu. Petza riceve in un ambiente ricco di storia, in un’atmosfera calda e accogliente. Non è casuale che abbia sempre dato il nome S’Apposentu ai suoi ristoranti: s’apposentu, il salotto buono di casa. Le materie prime legate al territorio e la maestria di Roberto Petza attirano nel sud della Sardegna gli amanti della raffinata qualità del buon mangiare. C’è attenzione all’ambiente e all’ecosistema. Da anni si propone l’uso di pesce povero e non a rischio estinzione. S’Apposentu vanta attualmente una stella Michelin e tre forchette del Gambero Rosso.

Roberto Petza was born in 1968 in San Gavino Monreale, a small town on the Campidano plain. After graduating from the Alghero Institute of Tourism, he decided to refine his techniques in the best restaurants. In 1998 he returned to Sardinia and inaugurated the S’apposentu restaurant in his birthplace. In 2002 he moved to Cagliari and founded the S’apposentu at the Teatro Lirico, always using his local cuisine and selected raw materials. Gourmet and great national and international gourmet guides rewarded him for his efforts. In 2010 he undertook a new challenge. He invented the Academy of High Sardinian Cuisine in Pasta Country: Siddi. Here he also relocated his restaurant to a liberty villa of the early 1900s, in the family home of the owners of Pastificio Puddu. The Casa Puddu’s S’apposentu restaurant and the Casa Puddu Academy are home to this venture. Petza receives customers in a richly historic environment and a warm and welcoming atmosphere (with something of a top parlour vibe). In the kitchen, attention is paid to the environment and the ecosystem. Currently, S’apposentu boasts a Michelin Star and three Gambero Rosso Forks.
