La cucina è vita. Richiede passione, impegno, creatività, dedizione, umiltà. Caratteristiche che Viviana, nata nel 1974 a Salerno, ha fin dai tempi della trattoria di pesce di famiglia. Lascia la Campania per crescere. È all’Albereta del Maestro Gualtiero Marchesi e a El Celler De Can Roca, a Girona, poi all’Enigma di Albert Adrià a Barcellona, ad Aponiente di Angel Leon a Cadice e al Relae di Christian Puglisi, fino ad aprire nel 1999, a Orio Litta (LO), Il Girasole.
Incontra Sandra Ciciriello e nel 2007 nasce Alice Ristorante a Milano che ottiene la prima stella Michelin nel 2011 e si trasferisce poi all’interno di Eataly Smeraldo. I suoi piatti vanno alla scoperta dei sapori del mare e della terra, con ingredienti eccellenti alla vista e al palato.
Nel 2010 per Gambero Rosso Milano è la giovane emergente dell’anno. Per Identità Golose è migliore chef donna 2011. Da febbraio 2015 entra a far parte dell’associazione Le Soste. A maggio dello stesso anno diventa chef ambassador di Expo Milano. Nel giugno 2019 Alice diventa Viva. La cucina è ancora più vicina a ortaggi e verdure di stagione.

Cooking is life. It takes passion, commitment, creativity, dedication and modesty, qualities that Viviana Varese, born in Salerno in 1974, has since the days of her family fish restaurant. She left Campania to grow up in the business. She spent some time at the Albereta with Maestro Gualtiero Marchesi and in Spain at El Celler De Can Roca in Girona, then at the Enigma in Barcelona with Albert Adrià, at the Aponiente with Angel Leon in Cadiz and at the Relae with Christian Puglisi. In April 1999 she opened Il Girasole in Orio Litta, Lodi.
In 2007 Viviana met Sandra Ciciriello and together they opened Alice Ristorante in Milan achieving the first Michelin star in 2011. They then moved to Eataly Smeraldo. Viviana’s dishes explore sea and land flavours with ingredients appealing both to the eye and the mouth.
She was appointed emerging youth for the year 2010 by Gambero Rosso. She was the best female chef 2011 for Identità Golose. In February 2015 Viviana entered Le Soste association. In May of the same year she was chef ambassador at Expo Milano. In June 2019 Alice changed its name to Viva: the dishes are now even closer to season greens and vegetables.
